The Avila Story
Named for the view
Every morning in Caracas, before the city woke, Jose’s grandmother, Abuela Carmen, was already at the stove. Her kitchen window faced El Ávila, the mountain above the city, and that is where she taught Jose her culinary secrets and her one rule: nobody leaves hungry.
Years later in Houston, Jose was cooking her dishes for friends, and they kept urging him to share her recipes with the world, so he called her for her blessing. She laughed and said, “Just don’t make them small, and put the mountain on it.” So he did. Avila Food Truck is named for the view from his grandmother’s window.
